Clarica's Melitzanosalata

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 3 lbs eggplants
  • 1 garlic clove, crushed and minced or grated
  • 2 tomatoes, peeled and diced
  • 2 tablespoons parsley, fresh, chopped
  • 1 teaspoon oregano, dried, crumbled
  • 1/3 cup olive oil
  • 6 tablespoons red wine vinegar
  • salt and pepper

Recipe

  • 1 preheat oven to 375 degrees; roast eggplant.
  • 2 peel off and discard skin and stem, then dice roasted eggplant into 1/2 inch cubes.
  • 3 mix eggplant with garlic, tomatoes and herbs, and toss with olive oil and vinegar, to taste.
