Ingredients

- 3 lbs eggplants
- 1 garlic clove, crushed and minced or grated
- 2 tomatoes, peeled and diced
- 2 tablespoons parsley, fresh, chopped
- 1 teaspoon oregano, dried, crumbled
- 1/3 cup olive oil
- 6 tablespoons red wine vinegar
- salt and pepper
Recipe
- 1 preheat oven to 375 degrees; roast eggplant.
- 2 peel off and discard skin and stem, then dice roasted eggplant into 1/2 inch cubes.
- 3 mix eggplant with garlic, tomatoes and herbs, and toss with olive oil and vinegar, to taste.
