Ingredients

- 2 lbs manila clams
- 3 tablespoons red onions, diced
- 3 tablespoons carrots, diced
- 3 tablespoons celery, diced
- 1/4 cup tomato, peeled and chopped
- 1 chipotle chile, chopped
- 1 teaspoon garlic, chopped
- 1 tablespoon fresh oregano, chopped
- 1 1/2 cups vegetable stock
- 2 tablespoons butter
- salt and pepper, to taste
Recipe
- 1 clean clams to remove sand and grit.
- 2 combine remaining ingredients, except salt and pepper.
- 3 cover and cook over high heat until clams open.
- 4 adjust seasoning with salt and pepper.
