Cabin Fever Game Night Taco Dip

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • 1 (16 ounce) can refried beans
  • 1/2 cup salsa or 1/2 cup picante sauce
  • 1 cup shredded cheddar cheese
  • 1 (8 ounce) package cream cheese
  • 1/4 cup sour cream
  • 3 tablespoons mayonnaise
  • 1 teaspoon garlic powder
  • 1 avocado, mashed
  • 1 onion, chopped
  • 1 tablespoon lemon juice
  • tomato, seeded, diced
  • black olives, sliced
  • green onion, sliced (including stems)
  • cheddar cheese, grated
  • tortilla chips

Recipe

  • 1 mix beans & salsa, spread on cookie sheet or serving tray; sprinkle cheddar over this; press lightly into bean-salsa mixture.
  • 2 in a medium mixing bowl, beat cream cheese, sour cream, mayo & garlic powder until very smooth; spread over bean-cheese in pan.
  • 3 in a blender or by hand, mix avocado, onion and lemon juice until very smooth; spread this over half the cream cheese layer (some people don't like guacamole!).
  • 4 by now your kitchen should have messes on every counter!
  • 5 over the top, in a festive arrangement, sprinkle on your choice of the toppings.
  • 6 serve with tortilla chips.
  • 7 leftovers: slop together (artfully, of course) and serve over tortilla chips or spoon into a taco shell or on a tortilla skin. this is even good when heated up.
