Cinnamon Blintzes

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 40
  • 2 loaves fresh thin-sliced bread
  • 2 (8 ounce) packages cream cheese
  • 2 egg yolks
  • 1/2 cup sugar
  • 1 cup margarine, melted
  • 1 cup light brown sugar, mixed with
  • 2 -3 teaspoons cinnamon

Recipe

  • 1 trim bread crusts and, using a rolling pin, flatten crustless bread slices.
  • 2 cream together cream cheese, egg yolks, sugar.
  • 3 spread cream cheese mixture thinly on bread.
  • 4 roll up.
  • 5 dip each roll in melted margarine, then in brown sugar/cinnamon mixture.
  • 6 freeze on cookie sheet.
  • 7 store in ziploc bags.
  • 8 to bake, take desired number of blintzes from freezer.
  • 9 do not thaw.
  • 10 put on cookie sheet.
  • 11 bake at 350 degrees 15-20 minutes.
