Chive And Parmesan Frittata Bites

Ingredients
- 8 large eggs
- fresh ground black pepper
- 1 ounce chives, snipped
- 1/2 ounce butter
- 1 ounce parmesan cheese, finely grated
Recipe
- 1 beat together the eggs, some seasoning and finely snipped fresh chives. preheat the broiler to high.
- 2 melt the butter in a non-stick 7in frying pan. when the butter is foaming, add the egg mixture and cook gently for 8 minutes or until almost set. sprinkle with the parmesan.
- 3 broil the frittata for 2-3 minutes until golden brown and set, then cut into diamonds and skewer with a toothpick.
- 4 serve hot.
