Chive And Parmesan Frittata Bites

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • 8 large eggs
  • fresh ground black pepper
  • 1 ounce chives, snipped
  • 1/2 ounce butter
  • 1 ounce parmesan cheese, finely grated

Recipe

  • 1 beat together the eggs, some seasoning and finely snipped fresh chives. preheat the broiler to high.
  • 2 melt the butter in a non-stick 7in frying pan. when the butter is foaming, add the egg mixture and cook gently for 8 minutes or until almost set. sprinkle with the parmesan.
  • 3 broil the frittata for 2-3 minutes until golden brown and set, then cut into diamonds and skewer with a toothpick.
  • 4 serve hot.
