- 1 1/2 cups corn (frozen, canned, or fresh)
- 4 medium potatoes, chopped into bite size bits
- 2 cups chicken, cooked and shredded
- 4 cups chicken broth
- 1 1/2 cups coconut milk
Recipe
- 1 cook potatoes in chicken broth until tender, but not mushy. add corn and cooked chicken and bring to a boil. remove from heat, add coconut milk, and serve immediately.
