Black Bean Hummus

Ingredients

- 1 1/2 cups cooked black beans (cooked from dry or canned, drained)
- 1/3 cup tahini
- 1/4 cup fresh lime juice
- 3 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1/4 cup thinly sliced scallion ( and green parts)
- 1/4 teaspoon ground cumin
Recipe
- 1 add the beans, tahini, lime juice, olive oil, and garlic to a food processor fitted with a steel blade.
- 2 cover and process until pureed.
- 3 add in the scallions and cumin; cover and process until just combined.
- 4 variation--add1/4 cup chopped fresh cilantro and tabasco sauce to taste.
