Black Bean Hummus

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 6
  • 1 1/2 cups cooked black beans (cooked from dry or canned, drained)
  • 1/3 cup tahini
  • 1/4 cup fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/4 cup thinly sliced scallion ( and green parts)
  • 1/4 teaspoon ground cumin

Recipe

  • 1 add the beans, tahini, lime juice, olive oil, and garlic to a food processor fitted with a steel blade.
  • 2 cover and process until pureed.
  • 3 add in the scallions and cumin; cover and process until just combined.
  • 4 variation--add1/4 cup chopped fresh cilantro and tabasco sauce to taste.
