Baked Portobello Caps With Melted Goat Cheese

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 cup no-sugar-added spaghetti sauce
  • 4 large portabella mushroom caps
  • 1 (4 ounce) package reduced-fat goat cheese, cut into 4 pieces
  • 2 tablespoons pine nuts, finely chopped
  • 1 tablespoon chopped fresh basil
  • 1 sprig fresh basil (to garnish) (optional)

Recipe

  • 1 preheat the oven to 375*f.
  • 2 spread the sauce in the bottom of a 9"x9" baking dish.
  • 3 arrange the mushroom caps, gill side up, on top.
  • 4 place a piece of goat cheese on each mushroom.
  • 5 sprinkle evenly with the pine nuts.
  • 6 bake for 30 minutes, or until hot and bubbly.
  • 7 top with the chopped basil.
  • 8 garnish with the basil sprig, if using.
  • 9 makes 4 servings.
  • 10 enjoy!
