California Guacamole--diabetic Diet

Ingredients

  • Servings: 12
  • 2 medium hass avocadoes
  • 3 tablespoons fresh lemon juice
  • 1/2 cup onion, diced
  • 3 tablespoons tomatoes, chopped
  • 1/2 teaspoon salt
  • 2 tablespoons cilantro, minced

Recipe

  • 1 cut the avocados in half and remove the seeds.
  • 2 scoop out the pulp and place in a bowl.
  • 3 drizzle the pulp with lemon juice and mash.
  • 4 combine with the remaining ingredients, mix well and serve.
