Aubergines Espanol

Ingredients

- 2 large aubergines
- 3 tablespoons flour
- 2 eggs, beaten
- 1/2 teaspoon salt
- black pepper, 1/4 tsp
- oil (for frying)
- cane honey
Recipe
- 1 slice the aubergines into 1/4 " rings.
- 2 sprinkle with salt and allow to stand for 30 minutes.
- 3 wipe the moisture from the aubergines.
- 4 heat the oil in a frying pan.
- 5 season the flour with salt and pepper.
- 6 coat the slices with flour, then dip into the eggs.
- 7 fry till golden brown, dry on paper towels.
- 8 drizzle the cane honey over the slices and enjoy.
