Colorful Heirloom Bruschetta

Ingredients

- 1 1/2 cups chopped heirloom tomatoes
- 2/3 cup chopped green onion
- 2 garlic cloves, minced
- 1/2 teaspoon fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 2 tablespoons vinegar
- seeded sourdough baguette
Recipe
- 1 choose firm, ripe tomatoes in a variety of colors.
- 2 toss the chopped tomatoes, onions, and garlic together with the fresh herbs, salt and pepper. whisk the olive oil and vinegar till blended and pour over the tomato mixture, and stir mixture well.
- 3 store in the refrigerator to marinate for at last 1 hour, turning over the ingredients occasionally.
- 4 spoon over toasted bagette slices, or set out in a pretty bowl with a spoon and let guests serve themselves. for variety, add very thin mozarella slices.
