Chicken And Broccoli Soup

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 8 ounces broccoli
  • 2 ounces unsalted butter
  • 1 onion, chopped
  • 1 ounce basmati rice
  • 8 ounces boneless skinless chicken breasts, cut into fine slices
  • 1 ounce all-purpose flour
  • 1 1/4 cups milk
  • 1 7/8 cups chicken broth
  • 2 ounces sweetcorn
  • salt and pepper

Recipe

  • 1 break the broccoli into small florets and cook in a saucepan of lightly salted boiling water for 3 minutes drain then plunge into cold water and set one side.
  • 2 melt the butter in a saucepan over a medium heat, add the onion, rice and chicken and cook for 5 mins, stirring frequently.
  • 3 remove the saucepan from the heat and stir in the flour. return to the heat and cook for 2 mins, stirring constantly. stir in the milk and chicken broth, bring to the boil, stirring constantly, then reduce the heat and simmer for 10 minutes.
  • 4 drain the broccoli and add to the soup with the sweetcorn and salt and pepper to taste. simmer for 5 mins or until the rice is tender, then serve.
