Black Bean Tortilla Pinwheels

Ingredients

- 8 ounces softened cream cheese
- 1 cup sour cream (low fat is fine)
- 1 cup shredded monterey jack cheese
- 1/4 cup chopped pimento stuffed olive
- 1/4 cup chopped red onion
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder, to taste
- 1 (15 ounce) can black beans, drained
- 5 flour tortillas
Recipe
- 1 beat cream cheese and sour cream until well blended.
- 2 stir in monterey jack cheese, olives, onion, salt, and garlic powder.
- 3 cover and refrigerate for 2 hours.
- 4 process beans in a food processor until smooth.
- 5 spread each tortilla with a thin layer of beans.
- 6 spread layer of cream cheese mixture over beans.
- 7 roll up tightly, wrap in plastic wrap and refrigerate until well chilled.
- 8 cut into 3/4 inch slices (on a bias?).
- 9 serve with salsa.
