Artichokes With Vinaigrette

Ingredients

  • Servings: 4
  • 4 large artichokes, washed
  • 4 slices lemons
  • 1 1/2 cups vinaigrette

Recipe

  • 1 cut off artichokes stems and snap off leaves near bottom end. cover base with lemon slice and secure with kitchen string.
  • 2 place aritchokes in large pot containing at least 8 cups salted boiling water. partly cover and cook 40 to 50 minutes over med heat, depending on size.
  • 3 when cooked (center leaves should pull free easily) drain well and squeeze out excess water. seperate leaves on platter and remove and discard fuzzy choke. place artichoke bottoms with leaves.
  • 4 serve with vinaigrette.
