Caviar Egg Salad Appetizer

Ingredients
- 4 ounces red caviar
- 4 ounces black caviar
- 8 hard-boiled eggs, mashed
- 1 onion, diced finely
- 3/4 cup mayonnaise
- salt and pepper, to taste be careful caviar is salty
- melba toast
Recipe
- 1 mix together eggs, onion, mayonnaise and pepper.
- 2 mound onto a festive plate.
- 3 spread each caviar across each half of the mound.
- 4 arrange toast around the mound.
- 5 serve using a plastic or porcelain spreader.
- 6 caviar and metals don't mix.
