Caviar Cucumber Boats

Ingredients

• 1 (2 ounce) jar red salmon caviar (like romanoff)
• english cucumber, cut 1/2-inch thick slices
• 1/3 cup whipped cream cheese
• 1 teaspoon chopped fresh dill
• black pepper
• fresh dill sprigs or lemon zest

Recipe

• 1 scoop out center of each cucumber slice with a small melon baller.
• 2 in a small bowl combine cream cheese, chopped dill and black pepper.
• 3 using a small spoon or a pastry bag, fill the center of each hollowed cucumber slice. top each with a spoonful of caviar. garnish with dill sprigs.
