Chickpea Flour *besan* Hummus

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 2 1/2 cups water
  • 3/4 cup chickpea flour (garbanzo)
  • 2 -3 garlic cloves, minced
  • 1/4 teaspoon cumin, ground
  • 1/4 teaspoon salt
  • 1 lemon, juice of
  • 1/4 cup tahini
  • 2 tablespoons olive oil

Recipe

  • 1 pour 1/2 cup of water in 1 2 quart sauce pan.
  • 2 add all the ingredients except the garbanzo bean flour.
  • 3 whisk in the garbanzo bean flour to make a paste.
  • 4 whisk in slowly the remaining water.
  • 5 bring to a boil over medium heat, stirring occasionally.
  • 6 continue stirring and simmer for 3 minutes.
  • 7 remove from heat, cover and cool.
  • 8 use as a sandwich spread or as a dip.
  • 9 note: quantities of lemon juice, salt and garlic can be adjusted to preference.
