Black Bean Hummus (from 1001 Low-fat Vegetarian Recipes)

Ingredients

- 1 (15 ounce) can black beans, rinsed drained
- 1/4 cup reduced-sodium vegetable broth or 1/4 cup water
- 2 -3 tablespoons tahini
- 2 -2 1/2 tablespoons lemon juice
- 1 1/2 tablespoons soy sauce
- salt
- cayenne pepper, to taste
- 3 garlic cloves, divided
Recipe
- 1 process black beans, vegetable broth, tahini, lemon juice and soy sauce in a food processor until smooth.
- 2 season to taste with salt and cayenne pepper.
- 3 blend garlic in, a clove at a time, to suit your taste.
- 4 refrigerate 1 to 2 hours for flavours to blend.
- 5 serve with dippers (whatever you like!).
