Black Bean Hummus (from 1001 Low-fat Vegetarian Recipes)

Ingredients

  • Servings: 6
  • 1 (15 ounce) can black beans, rinsed drained
  • 1/4 cup reduced-sodium vegetable broth or 1/4 cup water
  • 2 -3 tablespoons tahini
  • 2 -2 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons soy sauce
  • salt
  • cayenne pepper, to taste
  • 3 garlic cloves, divided

Recipe

  • 1 process black beans, vegetable broth, tahini, lemon juice and soy sauce in a food processor until smooth.
  • 2 season to taste with salt and cayenne pepper.
  • 3 blend garlic in, a clove at a time, to suit your taste.
  • 4 refrigerate 1 to 2 hours for flavours to blend.
  • 5 serve with dippers (whatever you like!).
