Binch Akara (bean Drops)

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 18
  • 1 lb black-eyed peas
  • 2 teaspoons salt
  • 1 small onion, very finely chopped
  • 2 cups canola oil

Recipe

  • 1 pour dry beans in a blender with a cup of water.
  • 2 chop for one minute. pour in large bowl add water.
  • 3 stir until skins float. strain into colander; allow all skin and eyes to flow out.
  • 4 blend beans, onion and pepper. pour in a bowl, add salt, and stir with a wooden spoon for two minutes.
  • 5 heat oil until moderately hot. drop mixture into oil with spoon.
  • 6 fry until golden brown.
  • 7 drain on absorbent paper.
  • 8 small balls can be served with toothpicks.
