Asparagus Frittata Bites

Ingredients

- 8 eggs
- 1 cup shredded swiss cheese
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 300 g frozen asparagus, partially thawed
Recipe
- 1 in a bowl whisk together eggs, 1/2 cup swiss cheese, milk, salt and pepper.
- 2 cut tips of asparagus and set aside.
- 3 chop remaining asparagus and add to egg mixture.
- 4 pour into 8" square metal cake pan.
- 5 sprinkle with remaining cheese.
- 6 arrange asparagus tips neatly and evenly over the top.
- 7 bake at 350 for 30 minutes or until golden and knife inserted in centre comes out clean.
- 8 remove from pan.
- 9 cut into 16 squares.
- 10 cut each square diagonally in half to form triangles.
