Asparagus Frittata Bites

Ingredients

  • Servings: 32
  • 8 eggs
  • 1 cup shredded swiss cheese
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 300 g frozen asparagus, partially thawed

Recipe

  • 1 in a bowl whisk together eggs, 1/2 cup swiss cheese, milk, salt and pepper.
  • 2 cut tips of asparagus and set aside.
  • 3 chop remaining asparagus and add to egg mixture.
  • 4 pour into 8" square metal cake pan.
  • 5 sprinkle with remaining cheese.
  • 6 arrange asparagus tips neatly and evenly over the top.
  • 7 bake at 350 for 30 minutes or until golden and knife inserted in centre comes out clean.
  • 8 remove from pan.
  • 9 cut into 16 squares.
  • 10 cut each square diagonally in half to form triangles.
