Chilled Cream Of Celery Root Soup

Ingredients
- Servings: 4
- 2 small celery root or 1 large celery root (2 pounds)
- 1 1/2 cups buttermilk
- 1/4 teaspoon salt
- 1 dash pepper
- 1/2 cup finely chopped chives or 1/2 cup green onion top
Recipe
- 1 peel the celery root and dice into 1/2-inch cubes.
- 2 place it in a steamer and steam over boiling water for 10 minutes, or until tender enough to be easily mashed.
- 3 remove celery root from steamer and reserve one cup of liquid.
- 4 put one-third of the celery root and the reserved liquid in a blender.
- 5 blend until smooth, alternately adding the remaining celery root along with the buttermilk, salt and pepper.
- 6 blend until smooth.
- 7 pour into a bowl and add the chopped chives.
- 8 mix thoroughly.
- 9 chill before serving.
- 10 serve in chilled soup bowls or mugs.
