Chilled Cream Of Celery Root Soup

Ingredients

  • Servings: 4
  • 2 small celery root or 1 large celery root (2 pounds)
  • 1 1/2 cups buttermilk
  • 1/4 teaspoon salt
  • 1 dash pepper
  • 1/2 cup finely chopped chives or 1/2 cup green onion top

Recipe

  • 1 peel the celery root and dice into 1/2-inch cubes.
  • 2 place it in a steamer and steam over boiling water for 10 minutes, or until tender enough to be easily mashed.
  • 3 remove celery root from steamer and reserve one cup of liquid.
  • 4 put one-third of the celery root and the reserved liquid in a blender.
  • 5 blend until smooth, alternately adding the remaining celery root along with the buttermilk, salt and pepper.
  • 6 blend until smooth.
  • 7 pour into a bowl and add the chopped chives.
  • 8 mix thoroughly.
  • 9 chill before serving.
  • 10 serve in chilled soup bowls or mugs.
