Christmas Snack Mix

Total Time: 12 mins Preparation Time: 10 mins Cook Time: 2 mins

Ingredients

  • 8 cups popped popcorn
  • 2 cups pretzels
  • 2 cups cheerios toasted oat cereal
  • 1 1/2 cups pecan halves
  • 1 cup dried cranberries
  • 1/3 cup butter
  • 2/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 3/4 teaspoon cayenne

Recipe

  • 1 mix dry ingredients and cranberries.
  • 2 melt butter, brown sugar, cinnamon and cayenne, 1 to 1 1/2 minutes.
  • 3 drizzle butter mixture over popcorn mixture and toss well to coat.

Bourbon Meatballs

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 2 cups barbecue sauce, your choice
  • 1 1/2 cups bourbon, your favorite
  • 1 cup honey
  • 1 cup prepared mustard
  • 1/8 teaspoon worcestershire sauce
  • 1 (32 ounce) package frozen cooked meatballs (or your homemade, if you prefer)

Recipe

  • 1 combine the first 5 ingredients to make the bourbon sauce.
  • 2 pleace in a dutch oven at medium heat for 5 minutes.
  • 3 add the meatballs and bring to a boil.
  • 4 reduce heat and simmer 25 minutes.

Annie's Bloody Mary Mix

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 2 (32 ounce) cans tomato juice
  • 2 tablespoons horseradish
  • 1 tablespoon celery salt
  • 1 tablespoon salt
  • 1 tablespoon cracked pepper
  • 1 tablespoon onion salt
  • 2 ounces lime juice
  • 2 ounces lemon juice
  • 3 ounces worcestershire sauce
  • 5 dashes tabasco sauce

Recipe

  • 1 mix in order given.
  • 2 fill glass with ice.
  • 3 add 1 1/2 shots vodka and fill with bloody mary mix.
  • 4 garnish with a dill pickle spear, celery, cucumber wheel, carrot, or veggies of your choice.
  • 5 keep refrigerated.

Cheesy Olive Garlic Bread

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1/2 cup butter, softened
  • 1/2 cup hellmann's mayonnaise
  • 3/4 tablespoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons olive spread
  • 4 -6 slices bacon, halved (optional)
  • 1 loaf french bread, slice horizontally

Recipe

  • 1 preheat oven 350 degrees.
  • 2 mix first 6 ingredients in a bowl.
  • 3 mix well.
  • 4 spread evenly on bread.
  • 5 top with bacon strips.
  • 6 bake on a baking sheet 15-20 minutes or until it is starting to turn brown.
  • 7 slice and serve hot.

Baked Cream Cheese

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 4 (3 ounce) blocks cream cheese
  • 2 eggs, beaten
  • 1 garlic clove, minced
  • 1/2 teaspoon thyme
  • 1/2 teaspoon paprika
  • 4 ounces butter or 4 ounces margarine
  • flour
  • breadcrumbs
  • 1 pinch pepper

Recipe

  • 1 place beaten eggs, breadcrumbs and flour each in separate bowls.
  • 2 dip cream cheese in flour, then eggs, then breadcrumbs. repeat.
  • 3 place in individual baking dishes (or in a muffin tin) and sprinkle with seasonings. place 1 oz. of butter on each block.
  • 4 bake at 400f for 10 minutes or until golden brown.
  • 5 serve warm.

A Little Lighter Party Bean Dip

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1 (16 ounce) can refried beans
  • 1 cup bottled salsa (we like pace medium)
  • 2/3 cup frozen whole kernel corn, thawed
  • 1/4 cup chopped green onion
  • 2 tablespoons chopped black olives
  • 3/4 cup cheddar cheese
  • 1/2 cup light sour cream
  • 1/2 cup plain yogurt
  • 2 tablespoons fresh cilantro, chopped

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine lime juice, cumin, and beans in a medium bowl, stirring until well combined. spread mixture evenly into an 11x7 inch baking dish coated with cooking spray. spread salsa evenly over beans.
  • 3 combine corn, onions, and olives; spoon corn mixture evenly over salsa. sprinkle cheese over corn mixture.
  • 4 bake at 350 for 20 minutes or until bubbly.
  • 5 meanwhile combine sour cream and yogurt. remove dip from oven and let stand 10 minutes. top with sour cream-yogurt mixture; sprinkle with cilantro. serve with tortilla chips.

Chicken Club Ring

Ingredients

  • Servings: 8
  • 2 (8 ounce) packages refrigerated crescent dinner rolls
  • 3 cups chicken, cooked, coarsely chopped
  • 4 slices bacon, cooked crisply, drained and chopped
  • 1 cup shredded swiss cheese, divided
  • 1/3 cup mayonnaise
  • 1 teaspoon dijon mustard
  • 2 tablespoons snipped fresh parsley
  • 1 garlic clove, pressed
  • 2 plum tomatoes, sliced
  • 1 egg , lightly beaten

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 unroll crescent rolls, separate into 16 triangles.
  • 3 arrange triangles slightly overlapping, in a circle on a pizza pan, wide ends in and 4 inches from the edge of the pan. (points will extend off the edge of the pan).
  • 4 roll wide ends of dough towards center to create a 5 inch opening.
  • 5 combine chicken, bacon, 3/4 cup cheese, mayonnaise, mustard, parsely and garlic. mix well.
  • 6 scoop filling evenly over dough in a circle.
  • 7 top with tomato slices.
  • 8 bring points of triangles up over filling and tuck under dough at center to form a ring.
  • 9 brush with egg .
  • 10 sprinkle remaining cheese on top.
  • 11 bake for 25-30 minutes or until golden brown.

Bean Dip

Ingredients

  • Servings: 6
  • 1 can refried beans, mixed with
  • 2 tablespoons ortega taco sauce
  • 1 avocado, mashed with
  • 1 tablespoon miracle whip
  • 1 (8 ounce) jar ortega taco sauce
  • 1 can sliced black olives, drained
  • 1 green pepper, diced
  • 1 tomato, diced
  • 1 bunch green onion, diced
  • 2 cups shredded cheddar cheese

Recipe

  • 1 in a 10 inch pie pan layer the ingredients in the order listed.
  • 2 chill.
  • 3 serve with tortilla chips.

Cheesy Horseradish Spread

Ingredients

  • 1 lb velveeta cheese
  • 1 cup mayonnaise
  • 5 ounces horseradish

Recipe

  • 1 melt velveeta.
  • 2 add mayonnaise and 3-5 oz of the horseradish.
  • 3 chill.

Baked Crab Rangoon (using Imitation Crab)

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • 2 (8 ounce) packages cream cheese, softened (low-fat is fine)
  • 1 (8 ounce) package imitation crabmeat, flaked
  • 1 1/2 teaspoons garlic, minced
  • 1/4 teaspoon paprika
  • 1/4 cup green onion, finely chopped, green parts only
  • 1/2 tablespoon soy sauce
  • 1 (14 ounce) package wonton wrappers
  • 1 large egg, beaten

Recipe

  • 1 in a food processor, mix all ingredients, except the wontons and the egg.
  • 2 preheat the oven to 375 degrees f.
  • 3 place approximately 1 teaspoon of the cream cheese mixture in the center of wonton wrappers. moisten wrapper edges with a small amount of egg, fold over the mixture and pinch to seal.
  • 4 bake the wontons for about 15 minutes, or until golden brown.
  • 5 serve with plum sauce or sweet and sour sauce for dipping.
  • 6 notes:.
  • 7 i have found wonton wrappers at both safeway and walmart, but i prefer the ones from safeway. they are about the same price, and the safeway ones are thinner and taste better (in my opinion).
  • 8 you can also make these ahead and freeze them: make the filling and seal the wontons. place them (unbaked) on a baking sheet and stick the sheet in the freezer, until the wontons are frozen. take the wontons off the baking sheet and put them in a ziploc freezer bag (this way they won't stick together). when ready to bake, take as many as you need from the freezer, lightly grease a baking sheet, and bake as directed.

Caribbean Sauce For Chicken Or Lamb

  • 1 cup chili sauce
  • 8 green onions, thinly sliced
  • 2 -4 jalapeno peppers, seeded and chopped
  • 3 cloves garlic, minced
  • 2 tablespoons cooking oil
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth or 1/4 cup water
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground allspice

Recipe

  • 1 in a medium mixing bowl combine chili sauce, green onions, jalapeno peppers, garlic, oil, lemon juice, chicken broth or water, salt, ginger, and allspice.
  • 2 pour desired amount of sauce into small bowl.
  • 3 brush on chicken or lamb frequently the last 10 minutes of grilling.
  • 4 makes 2-1/3 cups (enough for 6 to 8 pounds chicken pieces or 3 to 4 pounds boneless lamb).
  • 5 store unused portion of sauce in refrigerator up to 3 weeks.

Billys Crab Cakes

  • 1 cup panko breadcrumbs
  • 1 lb lump crabmeat
  • 1/2 cup mayonnaise
  • 1 large egg yolk
  • 1 stalk celery, finely chopped
  • 1/4 cup finely chopped dill pickle
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1/2 cup chicken broth
  • 1 cup milk
  • 3 tablespoons whole grain mustard
  • 2 teaspoons yellow mustard seeds
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground pepper

Recipe

  • 1 mix all ingredients together then roll in panko, place on plate refrige for hour, make sause: melt butter stir in flour curryand paprika, cook 1-2 mins, add chicken broth and milk, simmer stirring until thickened, 5 mins, stir in mustard adn mustard seeds, simmer, 5 mins, whisk in remaining tbs butter salt and pepper to taste. keep warm.
  • 2 fry crab cakes melt 1 tbs olive oil in large skillet cook until browned on bottom, 2-3 minutes then turn and cook until evenly browned.

Carrot And Mint Soup

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 1 lb carrot, sliced
  • 1 onion, sliced
  • 1 garlic clove, crushed
  • 4 cups vegetable stock
  • 1 tablespoon cornstarch (blended with 2 tbs water)
  • 2 teaspoons mint, chopped
  • fresh ground black pepper
  • mint, to serve
  • 4 tablespoons croutons, to serve

Recipe

  • 1 melt the oil in a large pan. add the carrots, onion and garlic and cook gently until soft.
  • 2 add the stock and pepper to taste. bring to the boil and simmer for 25 minutes.
  • 3 puree or pass through a sieve. cool.
  • 4 if freezing ahead then pour soup into a rigid container, seal, label and freeze.
  • 5 spoon into a saucepan and heat gently until thawed. stir in the blended cornstarch and bring to the boil, gently simmer and continue stirring until slightly thickened, now add the chopped mint.
  • 6 garnish with mint and serve with croutons.

Bourbon Glazed Smokies

Ingredients

  • 1 lb little smokies sausage
  • 1 lb bacon
  • 3/4 cup brown sugar
  • 1/2 cup bourbon
  • 1/2 cup chili sauce
  • 1 tablespoon dijon mustard

Recipe

  • 1 preheat oven to 375.
  • 2 cut bacon into 1/3.
  • 3 wrap each smokie with bacon.
  • 4 secure with toothpick.
  • 5 bake til bacon is crisp.
  • 6 drain.
  • 7 blend together all other ingredients.
  • 8 pour over smokies.
  • 9 bake 15 more minutes.

A New Spinach Dip

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 4
  • 16 ounces sour cream
  • 1 (1 7/8 ounce) envelope dry vegetable soup mix
  • 1/4 cup salsa ranch dressing (i used portsmans brand)
  • 10 ounces frozen chopped spinach

Recipe

  • 1 thaw the spinach and squeeze the water out.
  • 2 mix all the ingredients together in a quart-sized bowl.
  • 3 tastes best if allowed to chill in refrigerator at least one hour before serving.
  • 4 serve with toast, crackers, chips or fresh vegetables.

Chicken Stuffed Chiles (poblano Peppers)

Ingredients

  • Servings: 4
  • 3 chicken breast halves, cooked and shredded
  • 4 poblano chiles, medium in size
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper, ground (or to taste)
  • 2 cups enchilada sauce, canned (or enchilada sauce)
  • 8 ounces mexican cheese, shredded

Recipe

  • 1 i like to cook the chicken breasts in a crock pot as they are tender and easy to shred.
  • 2 roast the poblanos either under the broiler on the grill until at least half of the skin is charred black.
  • 3 place the chiles in a zip-lock bag and let steam for about 20 minutes.
  • 4 prepare enchilada sauce.
  • 5 carefully remove the outer skin from the chiles.
  • 6 cut a slit in the chiles and carefully remove the seeds. don't be overly concerned about the peppers splitting.
  • 7 mix the chicken with 1/2 cup of the enchilada sauce, salt, pepper, onion powder and one half of the cheese.
  • 8 stuff the chiles.
  • 9 spray a casserole dish with vegetable spray and place the peppers in the dish.
  • 10 cover with remaining sauce and cheese.
  • 11 bake in a 375°f oven until the peppers are heated through and the cheese is melted (about 20 minutes).

Caribbean Shrimp

Ingredients

  • Servings: 6
  • 1 egg
  • 1 cup all-purpose flour
  • 1/2 cup beer, preferably red stripe
  • 1/2 tablespoon baking powder
  • 1 tablespoon salt
  • 1/2 tablespoon fresh ground black pepper
  • 1/2 tablespoon red pepper (cayenne)
  • 1/2 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1/2 teaspoon dried leaf thyme
  • 1/2 teaspoon dried oregano leaves
  • 1 cup grated coconut (1-1/2)
  • vegetable oil (for frying)
  • 1 cup orange marmalade
  • 1/4 cup dijon-style mustard
  • 1/8 teaspoon ground ginger

Recipe

  • 1 peel and devein shrimp, leaving tails on.
  • 2 in a bowl, combine egg with 3/4 cup of the flour, the beer and baking powder.
  • 3 in another bowl, mix remaining flour with herbs and spices.
  • 4 holding tail, dip each shrimp first in batter, then in seasoned flour and shake off excess.
  • 5 sprinkle each shrimp liberally with grated coconut and set aside on a baking sheet.
  • 6 heat oil in a deep skillet over medium heat.
  • 7 add shrimp 1 at a time.
  • 8 cook until golden brown on all sides, turning once.
  • 9 drain on paper towels.
  • 10 prepare a sauce by mixing marma­lade, mustard and ginger in a small bowl.
  • 11 spoon sauce into 6 small bowls.
  • 12 place bowls on 6 appetizer plates.
  • 13 surround bowls with 4 shrimp per serving.

Christmas Snowman Bread For Dip

Ingredients

  • Servings: 10
  • 2 (1 lb) frozen bread dough, thawed
  • black icing or frosting
  • 1 egg, lightly beaten
  • ranch dip or spinach dip
  • assorted fresh vegetable
  • cracker

Recipe

  • 1 combine both loaves of thawed bread.
  • 2 preheat oven to 350 degrees.
  • 3 grease a cookie sheet.
  • 4 to make body, you will make 4 round balls from the dough. make each ball a little bigger. (just like a snowman.)
  • 5 you will take the smallest ball and form a hat. the hat will be a ball and a small round cylindar for the brim. place on greased baking sheet. (see picture).
  • 6 for body, flatten balls and place on the greased baking sheet.
  • 7 brush dough with egg.
  • 8 cover and let rise for about 30-35 minutes or til doubled.
  • 9 bake at 350º for 25-30 minutes til golden brown.
  • 10 remove to a wire rack to cool.
  • 11 cut an oval in in the lower ball of the snowman.
  • 12 hollow out bread leaving a shell.
  • 13 cut bread into cubes for dipping.
  • 14 let cool completely.
  • 15 use icing to draw eyes, nose, mouth and buttons on body. the bread has to be cooled completely or the icing will melt.
  • 16 fill hole in belly with with dip.
  • 17 surround entire bunny with bread cubes, fresh veggies and crackers for dipping.

Cheesy Hot Broccoli Dip

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 (1 1/2 lb) round sourdough loaf, loaf
  • 1/2 cup finely chopped celery
  • 1/2 cup chopped red pepper
  • 1/4 cup chopped onion
  • 2 tablespoons butter
  • 1 lb velveeta american cheese spread, cubed
  • 1 (10 ounce) package frozen chopped broccoli, thawed and drained

Recipe

  • 1 carefully slice the top off the bread so you can use it as the lid.
  • 2 remove center, leaving a 1 inch shell.
  • 3 cut the removed bread into bite size pieces.
  • 4 cover bread with top.
  • 5 place on a cookie sheet with the bread pieces.
  • 6 bake at 350 for 15 minutes.
  • 7 in a large skillet, saute celery, pepper and onion in the 2 tbs. butter.
  • 8 reduce heat to low.
  • 9 add process cheese spread and stir until melted.
  • 10 stir in remaining ingredients and heat thoroughly.
  • 11 spoon the mixture into the bread loaf.
  • 12 serve hot with the toasted bread pieces and any vegetables or crackers.

Cheesy Onion Roll-ups

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 cup sour cream
  • 8 ounces packaged cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 3/4 cup sliced green onion
  • 1 tablespoon lime juice
  • 1 tablespoon jalapeno pepper, seeded and minced
  • 12 (6 inch) flour tortillas
  • 1 (16 ounce) jar picante sauce

Recipe

  • 1 in a medium bowl, mix sour cream, cream cheese,cheddar cheese, green onions, lime juice, and jalapeño peppers.
  • 2 spread one side of each tortilla with the sour cream mixture.
  • 3 tightly roll each tortilla.
  • 4 place rolled tortillas on a medium serving dish and cover with plastic wrap.
  • 5 chill in refrigerate at least one hour.
  • 6 slice tortillas into 1-inch pieces.

Chris's Sausage Appetizer

  • 2 lbs smoked sausage
  • 16 ounces any kind beer
  • 1 lb brown sugar

Recipe

  • 1 slice sausage and combine with beer and sugar in crockpot and cook on low for 6 hours.

Bambini, Italian Appetizers

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese or 1/4 cup romano cheese, shredded
  • chopped pepperoni slice, to taste, maybe 1/2 cup
  • italian spices
  • 1 (12 ounce) package flaky refrigerator biscuits, each peeled in half

Recipe

  • 1 combine all ingredients except biscuits.
  • 2 roll out each half.
  • 3 place 1 teaspoon cheese mixture on each rolled biscuit and fold in half. pinch edges to seal.
  • 4 sprinkle with italian spices.
  • 5 place on greased cookie sheet.
  • 6 bake at 350 for 20 minutes. serve warm.

Asparagus And Parmesan Puddings

Total Time: 1 hr 15 mins Preparation Time: 10 mins Cook Time: 1 hr 5 mins

Ingredients

  • Servings: 8
  • 1/2 cup fresh breadcrumb, made from crustless italian bread
  • 2 lbs asparagus, trimmed
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 1 cup freshly grated parmesan cheese (about 3 ounces)
  • 1/2 cup whole milk ricotta cheese
  • 1/4 cup all-purpose flour
  • 4 large eggs

Recipe

  • 1 butter eight 3/4-cup custard cups or soufle dishes.
  • 2 coat with breadcrumbs.
  • 3 cut off asparagus tips.
  • 4 cook tips in large saucepan of boiling salted water until crisp-tender, about 3 minutes.
  • 5 drain, reserve tips and 1 cup cooking liquid.
  • 6 coarsley chop asparagus stalks.
  • 7 melt butter in large nonstick skillet over medium heat.
  • 8 add onion; saute until tender, about 6 minutes.
  • 9 add stalks; saute until crisp-tender, about 5 minutes.
  • 10 add reserved asparagus cooking liquid.
  • 11 cover, simmer until stalks are tender, about 12 minutes.
  • 12 uncover, cook until liquid is absorbed, stirring often, about 5 minutes.
  • 13 transfer to food processor, puree.
  • 14 add parmesan, ricotta, and flour.
  • 15 using on/off turns, process just until blended.
  • 16 season with salt and pepper.
  • 17 whisk eggs in bowl to blend.
  • 18 add asparagus puree, whisk to blend.
  • 19 stir in all but 16 asparagus tips.
  • 20 divide custard among cups.
  • 21 place cups in roasting pan.
  • 22 preheat oven to 350.
  • 23 pour hot water into pan to come 1 inch up sides of cups.
  • 24 bake puddings until set, about 35 minutes.
  • 25 let stand 10 minutes.
  • 26 invert onto plates.
  • 27 granish with reserved asparagus tips.

Cheesy Onion Garlic Bread

Total Time: 50 mins Preparation Time: 45 mins Cook Time: 5 mins

Ingredients

  • Servings: 8
  • 2 french baguettes (purchase the long thin crusty bread)
  • 2 large yellow onions, very finely chopped (or minced)
  • 2 tablespoons minced fresh garlic (or to taste)
  • salt and black pepper
  • 1/4 cup butter, softened (can use more)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup mayonnaise (do not use salad dressing it's too sweet!)

Recipe

  • 1 set oven to broiler heat.
  • 2 slice both baguettes diagonally into about 3/4-inch slices.
  • 3 in a medium skillet over medium heat melt butter.
  • 4 add in the onions and garlic and saute for about 5-6 minutes or until tender, then season lightly with black pepper and a small amount of salt; set aside to cool.
  • 5 in a mixing bowl combine the mozza cheese with parmesan and mayonnaise.
  • 6 arrange the bread slices on a large baking or cookie sheet.

Baked Crab With Brie Wrapped In Puff Pastry

  • 1 stalk green onion, minced
  • 1 teaspoon tabasco sauce
  • 2 tablespoons best food mayonnaise
  • 1 lb brie cheese
  • 1 sheet pepperidge farm puff pastry, thawed
  • 1 egg yolk, mixed with
  • 1 teaspoon water

Recipe

  • 1 in a mixing bowl combine crab meat, green onion, tabasco sauce and mayonnaise and blend together.
  • 2 set out frozen puff pastry about 20 to 30 minutes before ready to use.
  • 3 on a working surface place the brie and cut a ring about an inch from the side and left out the center ring and remove some of the brie and spoon in the crab meat mixture and place the center pieces back in place.
  • 4 roll out pastry to 1/8" thickness. cut off a 4" strip and set aside to use as decoration.
  • 5 place brie in center of puff pastry and bring up edges and crimp edges together around brie, sealing completely. turn brie - crimped dough side down on a backing sheet. with remaining 4" of dough left cut out leaf design or anything you may want to use as a decoration. place on top of dough covered brie. refrigerate until ready to bake. this can be kept overnight for your convenience. just cover with plastic wrap.
  • 6 when ready to bake - remove plastic wrap. mix egg yolk with 1 teaspoon water and brush entire dough covered brie.
  • 7 preheat oven to 400°. bake for 15-20 minutes. remove from oven and let set 20-25 minutes before serving.

Bean Burrito Dip

  • 1 cup sour cream (more or less according to taste)

  • 10 ounces rotel tomatoes & chilies (i prefer hot)
  • 1/2 cup canned jalapeno slices (optional)

  • 1 mix refried beans, pinto beans, rotel tomato's, cheese (i leave a little cheese to add to the top before i bake) and place in an 8x8 baking dish.
  • 2 bake at 350 for 20-30 minutes ot until heated thru.
  • 3 after cooling slightly, put a layer of sour cream (depending on taste, i like a little thicker layer myself) followed by the chopped onion and if you choose, the jalapeno's (i put the jalapeno's on top so people can eat around them if they want).

  • 5 (i have used this same recipe with flour tortillas for simple bean burritos at a childs birthday party. i just used mild rotel and nixed the jalapeno's).

Chicken Coconut Satay Skewers

  • 1 1/2 lbs skinless boneless chicken breasts

  • 6 cloves garlic, peeled
  • 1/3 cup coconut milk
  • 2 tablespoons lemon juice

  • 1 teaspoon ground coriander leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground whole cumin seed
  • 1/4 teaspoon turmeric

  • 1 soak skewers in cold water for 1 to 2 hours before grilling.
  • 2 cut meat into 3/4 inch pieces.
  • 3 place in a medium sized bowl.
  • 4 in a food processor or blender whirl together shallots, garlic, coconut milk, lemon juice, sugar, coriander, salt, cumin and turmeric to form a smooth paste.

Baked Crab Rangoon

Recipe

  • 1 in medium bowl, combine all ingredients except won ton skins and butter.
  • 2 mix until well blended.
  • 3 place 1 teaspoon filling in center of each won ton skin.
  • 4 moisten edges with water.
  • 5 fold in half to form triangle, pressing edges to seal.
  • 6 pull bottom corners down and overlap slight; moisten one corner and press to seal. (usually there is a diagram on the won ton package. i think they look like little kerchiefs.).
  • 7 place each one in a muffin tin with the edges sticking up a little. brush with melted butter.
  • 8 bake in 425 oven for 12-15 minutes, or until golden brown.
  • 9 serve hot with desired sauce.
  • 10 note: i like hoisin or plum sauce and sweet and sour -- even jalapeno pepper jelly!

Asparagus Appetizer Roll Ups

  • 1 lb asparagus
  • 1 frozen pie crust
  • 1 tablespoon sesame seeds
  • 3 slices prosciutto
  • 1 tablespoon smart balance butter spread (melted)

Recipe

  • 1 bring a pot of water to boil and blanch the asparagus. drop into an ice bath to stop cooking.
  • 2 roll out pie crust to 1/8 inch thickness.
  • 3 slice the prosciutto into long thin strips.
  • 4 starting at the top of the spear, wrap a strip of prosciutto around the asparagus, spiraling it down to the base. do the same with the pie crust strips, overlaying the prosciutto.
  • 5 lay each spear on a cookie sheet. when each one is wrapped, brush lightly with melted butter and sprinkle with sesame seeds.
  • 6 bake at 350° for about 8 minutes, or until crust is golden.
  • 7 serve warm.

  • 3 brush the edges of wrap with water and fold into triangles-- press the edges to seal.
  • 4 place the filled won tons inside the cup of a muffin tin (2 in each tin). spray lightly with nonstick cooking spray and bake at 375 for 15-20 minutes.

Baked Cottage Cheese Sandwich

  • 1 1/2 cups cottage cheese (made from 1 ltr. of milk)
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 2 green chilies, washed,ends trimmed and finely chopped
  • 1 teaspoon garam masala powder
  • salt
  • 2 tablespoons cooking oil
  • 1/2 teaspoon cumin seed
  • 1 cup whole wheat flour
  • 100 ml milk
  • 100 ml water
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1 teaspoon sugar
  • salt
  • 1 tablespoon oil
  • 50 ml milk
  • 1 egg
  • 1 pinch ground nutmeg

Recipe

  • 1 mix all the ingredients listed under"for pancakes" together.
  • 2 keep aside for 15 minutes.
  • 3 now, heat oil in a wok.
  • 4 toss in cumin seeds and allow to crackle.
  • 5 once they stop crackling, add onions and saute until well browned.
  • 6 mix in the garam masala powder, salt, tomatoes and green chillies.
  • 7 saute nicely.
  • 8 fold in the crumbled cottage cheese (paneer).
  • 9 keep aside.
  • 10 now, heat a griddle on medium flame.
  • 11 smear a little oil on its surface.
  • 12 carefully, using a ladle, pour 4 tbsps.
  • 13 of the prepared batter on the griddle.
  • 14 flatten it now to make a round of about 6 inches in diameter.
  • 15 cover with a lid.
  • 16 when the pancake's cooked on one side, pour 1/2 teaspoons of oil on it and then flip it over to cook the other side.
  • 17 likewise, prepare 6 pancakes and keep aside.
  • 18 note: make sure you make the pancakes slightly thicker and softer instead of thin and crispy.
  • 19 now, in a medium-sized bowl, crack an egg and beat it well using an electric beater.
  • 20 add the milk, nutmeg powder, a pinch of salt and some sugar and mix well.
  • 21 then, grease an oven-proof dish (the size of pancakes).
  • 22 dip one pancake at a time in the egg-milk mixture.
  • 23 place it in the greased dish.
  • 24 gently, spread 2 tbsps.
  • 25 of the filling over the pancake, leaving a small gap along the edges.
  • 26 alternate each layer with pancake and filling.
  • 27 finish it with a pancake.
  • 28 pour the remaining egg-milk mixture over the pancakes.
  • 29 now, bake the dish in a pre-heated oven at 150c for 20 minutes or until it is firm.
  • 30 remove from the oven.
  • 31 serve hot with tomato sauce and sauteed veggies.

Beaujolais-glazed Chicken Wings

  • 1/3 cup soy sauce
  • 1/3 cup orange juice
  • 2/3 cup dry red wine, preferable beaujolais wine

  • 2 tablespoons gingerroot, chopped
  • 6 tablespoons red currant jelly
  • 2 tablespoons orange zest, grated
  • 1 tablespoon orange zest, thin julienne garnish

Recipe

  • 1 the wings: tips removed broken at joints into 2 pcs.
  • 2 place split wings in a large shallow non-aluminum pan. mix soy, orange juice, red wine, garlic and ginger-root together and pour over the wings. cover pan with plastic wrap and refrigerate overnight, turning several times in the marinade.
  • 3 preheat oven to 375°f line a baking pan with foil. coat a cooking rack with vegetable cooking spray and place rack in baking pan.
  • 4 drain chicken and arrange on rack. roast for 45 minutes, turning wings once. remove from oven, but do not turn off the oven.
  • 5 combine jelly, 2 t red wine, and grated zest in small pan medium heat. stir until jelly is melted. brush wings generously with the glaze and return to oven for 10 minutes. turn and brush again with glaze. bake another 10 minutes, or until a rich dark brown and shiny. remove and cool 5 minutes. can be baked up to a day ahead and reheated.
  • 6 arrange in overlapping rows. sprinkle with julienne zest. serve warm.

  • 1 heat oven to 450 degrees f.

  • 2 cups finely shredded cheddar cheese
  • 1 (17 1/2 ounce) package frozen puff pastry, defrosted
  • 1 teaspoon chili powder
  • 1/4 cup yellow mustard
  • 16 ounces cocktail franks or 16 ounces miniature smoked sausage

Recipe

  • 1 line a baking sheet with a silicone liner, foil, or parchment paper.
  • 2 sprinkle ½ cup of the cheese over your work surface and lay a sheet of the puff pastry over the cheese.
  • 3 sprinkle ¼ teaspoon of chili powder on one side of the pastry and another ¼ teaspoon on the other side.
  • 4 begin to roll out the puff pastry, sprinkling the work surface with another ½ cup of the cheese when you turn the pastry over.
  • 5 roll the pastry into a 16 x 12 inch rectangle, then cut into 2 x 1 inch strips.
  • 6 brush a thin layer of mustard down the center of each strip.
  • 7 lay a frank across the dough on top of the mustard and roll up the pastry so the ends of the frank are sticking out.
  • 8 place on the prepared baking sheet and repeat with the remaining franks, setting them 1 inch apart on the baking sheet, until you run out of pastry strips.
  • 9 then roll out and cut the second pastry sheet in the same manner as the first and toll up the remaining franks.
  • 10 **do-ahead—at this point, you can cover and refrigerate for up to 24 hours or freeze on the baking sheet, then transfer to a zip-lock plastic bag and keep frozen for up to 6 weeks.

Asparagus Avocado Crepes

  • 12 medium asparagus spears
  • 200 g grated swiss gruyere cheese
  • 3 avocados, thinly sliced
  • 12 crepes

Recipe

  • 1 use either fresh or tinned asparagus spears- if using'fresh', cook in boiling salted water for about 10 minutes or steam until tender.
  • 2 arrange 2 asparagus spears, grated cheese and slices of avacado on one half of each crepe.
  • 3 fold the other half of each crepe over the top of the filling.
  • 4 place in lightly greased pan and cook each side of filled crepe over moderate heat until the inside filling is heated and the ouside of the crepe is lightly crisped.

  • 8 cups broccoli, & broccoflower heads blanched
  • 1 cup petite carrot
  • 4 -8 cups mixed vegetables, grape tomatoes, cherry tomatoes, mixed olives, giardiniera (mixed pickled vegetables)

  • 1 place foam on platter.
  • 2 using toothpicks secure lettuce on foam just to cover.
  • 3 starting with the largest broccoli and broccoflower heads place on foam starting at the base and work your way up securing with toothpicks.
  • 4 push 1/2 the carrots randomly into the foam.

  • 1/2 large coconut, grated
  • 2 tablespoons bengal gram dal (split dried chickpeas) or 2 tablespoons channa dal (dried chickpeas)

  • 1 teaspoon split urad dal (split black gram)

  • 1 shred the cabbage into thin slices. mash the avocados and add the seasoning salt, garlic salt, and lime juice. add avocado mixture to the cabbage and mix until cabbage is covered completely. refrigerate for two hours.

  • 20 (8 inch) flour tortillas
  • 4 cups shredded mexican blend cheese (or use cheddar cheese)

Recipe

  • 1 set oven to 400 degrees.
  • 2 prepare a greased baking sheet.
  • 3 in a large saucepan or dutch oven combine the picante sauce with chopped chicken, onion, cumin, oregano and cayenne (if using) cook uncovered stirring often for about 30 minutes or until some of liquid has evaporated; season with salt and pepper to taste.
  • 4 spoon about 1/3 cup of the mixture below center of each tortilla, then top with about 3 tablespoons of shredded cheese.

  • 2 heat butter, vegemite and milk in a saucepan and stir until the vegemite dissolves.cool to room temperature.
