Chilled Avocado Soup

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 8
  • 2 medium avocados
  • 1 1/2 cups water
  • 1 cup milk
  • 2 tablespoons lemon juice
  • 2 1/2 teaspoons seasoning salt
  • 1 medium tomato, chopped
  • 8 lemon slices
  • 1 dash red pepper sauce

Recipe

  • 1 slice the avocados lengthwise into fourths.
  • 2 press through a sieve into a mixer bowl.
  • 3 add the water, milk and lemon juice gradually, beating until the mixture is smooth.
  • 4 stir in the seasoned salt, pepper sauce and tomato.
  • 5 chill, covered, in the refrigerator.
  • 6 spoon into soup bowls.
  • 7 top with the lemon slices.
