Ingredients

- 1 lb chicken liver
- 1 ounce smoked turkey bacon
- 1 small shallot, finely chopped
- 1/3 cup port wine or 1/3 cup cognac
- 2 eggs
- 1/4 teaspoon allspice, ground
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup milk, boiling
Recipe
- 1 blend everything except the milk in a food processor. pour into bowl and add the milk. bake in ramekins in bain marie for 1-1 1/2 hour at 300f convection until set as a loaf. serve warm. can be frozen.
