Chicken Liver Postej

Ingredients

  • Servings: 4
  • 1 lb chicken liver
  • 1 ounce smoked turkey bacon
  • 1 small shallot, finely chopped
  • 1/3 cup port wine or 1/3 cup cognac
  • 2 eggs
  • 1/4 teaspoon allspice, ground
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup milk, boiling

Recipe

  • 1 blend everything except the milk in a food processor. pour into bowl and add the milk. bake in ramekins in bain marie for 1-1 1/2 hour at 300f convection until set as a loaf. serve warm. can be frozen.
