Baked Mushrooms With Prosciutto

Ingredients
- 110 g cream cheese (spreadable extra light)
- 1 garlic clove (finely minced)
- 12 medium mushroom caps (approximately 6cm with stalks removed)
- garlic olive oil flavored cooking spray
- salt (to taste)
- pepper (to taste)
- 100 g prosciutto (grilled until crisp and broken into strips)
- 1 tablespoon chives (chopped for garnish)
Recipe
- 1 combine the cream cheese and garlic.
- 2 place the mushrooms on a foil-lined baking tray, stalk side up and spray with the oil and season to taste with salt and pepper.
- 3 cook under a preheated grill/broiler at medium heat for 6 to 8 minutes or until tender and allow to cool slightly.
- 4 spoon a dollop of the cheese mixture onto the mushrooms and top with the prosciutto and a sprinkle of chives and serve immediately.
