Baked Mushrooms With Prosciutto

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 110 g cream cheese (spreadable extra light)
  • 1 garlic clove (finely minced)
  • 12 medium mushroom caps (approximately 6cm with stalks removed)
  • garlic olive oil flavored cooking spray
  • salt (to taste)
  • pepper (to taste)
  • 100 g prosciutto (grilled until crisp and broken into strips)
  • 1 tablespoon chives (chopped for garnish)

Recipe

  • 1 combine the cream cheese and garlic.
  • 2 place the mushrooms on a foil-lined baking tray, stalk side up and spray with the oil and season to taste with salt and pepper.
  • 3 cook under a preheated grill/broiler at medium heat for 6 to 8 minutes or until tender and allow to cool slightly.
  • 4 spoon a dollop of the cheese mixture onto the mushrooms and top with the prosciutto and a sprinkle of chives and serve immediately.
