Aubergines Espanol

Total Time: 11 mins Preparation Time: 3 mins Cook Time: 8 mins

Ingredients

  • Servings: 4
  • 2 large aubergines
  • 3 tablespoons flour
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • black pepper, 1/4 tsp
  • oil (for frying)
  • cane honey

Recipe

  • 1 slice the aubergines into 1/4 " rings.
  • 2 sprinkle with salt and allow to stand for 30 minutes.
  • 3 wipe the moisture from the aubergines.
  • 4 heat the oil in a frying pan.
  • 5 season the flour with salt and pepper.
  • 6 coat the slices with flour, then dip into the eggs.
  • 7 fry till golden brown, dry on paper towels.
  • 8 drizzle the cane honey over the slices and enjoy.
