- 1/4 cup finely diced celery
- 1/4 cup minced fresh chives
- 1/4 cup mayonnaise
- 1 large egg
- 1 teaspoon dijon mustard
- 1 teaspoon old bay seasoning
- 1 1/4 cups panko breadcrumbs

- 1 sort through crab and discard any bits of shell. press out moisture with paper towels.
- 2 in a large bowl, combine celery, minced chives, mayonnaise, egg, mustard, and old bay; mix well with a fork.
- 3 add crab and 1/4 cup panko; stir gently just to mix.
- 4 put in fridge for 1/2 an hour or more if time permits.
- 5 put remaining panko in a shallow bowl.
- 6 shape crab mixture into about 6 cakes about a 1/2 inch thick.
- 7 place each cake in panko to coat on each side - place on baking stone or dish and reform into shape. should be sort of flat across - about a 1/2 inch thick - and formed around the edges.
- 8 bake in a 475°f regular or convection oven until golden brown, 15 to 18 minutes.
- 9 with a spatula, transfer crab cakes to a platter. add any sauce you want - but they turned out great without any sauce.

- 16 ounces sharp cheddar cheese, grated

- 1/2 cup green onion, minced

- 1 cut the top of the bread off reserving the top.

- 1 tablespoon corn oil
- 1 tablespoon worcestershire sauce

- 1/2 teaspoon salt

- 1 preheat oven to 325 degrees fahrenheit. simmer the bourbon in a small saucepan over medium heat until reduced by a quarter, just a few minutes. blanch the pecans in boiling water for 1 minute ( blanching the pecans in boiling water is an old chinese trick that makes them especially crisp), then drain.
- 2 combine the bourbon, oil, worcestershire sauce, bitters, and sugar in a large bowl. add the hot pecans and toss. let stand for 10 minutes.
- 3 spread the pecans in a single layer on a large baking sheet. bake until the nuts are crisp and the liquid has evaporated, 30 to 40 minutes, stirring every 10 minutes. turn the nuts into a clean bowl.
- 4 combine the cumin, cayenne, salt, and pepper in a small bowl. toss with the nuts and serve.

- 48 asparagus spears, thin
- 2 1/2 ounces goat cheese, montrachet, room temperature
- 2 tablespoons fresh basil, chopped
- 1 tablespoon pine nuts, toasted and chopped
- 1 tablespoon water
- 1 teaspoon orange peel, grated
- 2 ounces prosciutto, cut into 24 4x-1 strips

- 1 cut stalks from asparagus, leaving 2-inch-long tips.
- 2 reserve asparagus stalks for another use, if desired.
- 3 cook asparagus tips in large pot of boiling salted water until just crisp-tender, about 1 minute.
- 4 drain.
- 5 transfer asparagus to paper towels and drain well.
- 6 mix goat cheese, basil, pine nuts, water and orange peel in small bowl to blend.
- 7 season with salt and pepper.
- 8 spread scant 1 teaspoon filling over each prosciutto strip.

- 2 (8 ounce) packages cream cheese, room temperature
- 1 bunch green onion, chopped (i use green tops only, but you can use all if you like)
- 1 (10 ounce) can chicken meat, shredded
- season salt (i use lawry's)

- 1 mix together room temp cream cheese, chopped green onions, and shredded chicken, and just a few shakes of the season salt, pepper and garlic powder.
- 2 set aside.
- 3 in a 9 x 13 pan, lay out 1 tube of the crescent rolls, pressing out to solidly cover the entire bottom.
- 4 spread all of chicken mixture evenly over crescent roll layer.
- 5 lay 2nd roll of crescent rolls over the top, trying to cover as much of chicken mixture as possible.
- 6 you can try to cover it completely, but it is okay if you have a few holes here and there, makes for interesting presentation.
- 7 bake at temperature on crescent roll can, approximately 30-35 minutes, or until golden brown.
- 8 let cool for about 15 minutes before cutting.
- 9 slice into squares and enjoy!

- 3 add thawed meatballs. stir.
- 4 cover and simmer until hot.
- 5 stir in wine.
