Chilled Cucumber Soup

Total Time: 2 hrs Preparation Time: 2 hrs

Ingredients

  • Servings: 2
  • 1 cucumber
  • 1 clove garlic
  • 1 quart buttermilk
  • 1 teaspoon ground cumin
  • 1 tablespoon fresh dill, chopped
  • salt and pepper
  • dark bread

Recipe

  • 1 peel and seed cucumber.
  • 2 cut slices in finger-thick chunks.
  • 3 put in blender with other ingredients except dark bread.
  • 4 blend.
  • 5 refrigerate at least 1/2 hour before serving.
  • 6 cut dark bread into cubes.
  • 7 toast to croutons in a thick pan.
  • 8 blend soup again before serving.
  • 9 add croutons when serving.
