Chevre And Pear Quesadillas

Total Time: 23 mins Preparation Time: 15 mins Cook Time: 8 mins

Ingredients

  • 2 pears, peeled
  • 1 tablespoon olive oil
  • salt and pepper
  • 10 ounces soft fresh goat cheese, crumbled
  • 8 ounces monterey jack cheese, grated
  • 1 green onion, sliced
  • 6 soft flour tortillas, 10 inches in diameter

Recipe

  • 1 cut pears in half and remove cores. cut into 1/3 inch thick slices. toss slices with olive oil and a little salt and pepper. grill or saute for 1 minute on each side.
  • 2 chop pears into 1/2 " dice. combine pear, cheeses and green onion in a bowl. mix well.
  • 3 divide mixture into 6 portions and spread one portion onto half of each tortilla. fold tortilla in half.
  • 4 heat a non-stick or cast iron pan over medium heat. cook each tortilla for about 1 minute per side or until cheese melts.
  • 5 cut each tortilla into 4 pieces.
