Clams In A Spicy Broth

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 lbs manila clams
  • 3 tablespoons red onions, diced
  • 3 tablespoons carrots, diced
  • 3 tablespoons celery, diced
  • 1/4 cup tomato, peeled and chopped
  • 1 chipotle chile, chopped
  • 1 teaspoon garlic, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 1/2 cups vegetable stock
  • 2 tablespoons butter
  • salt and pepper, to taste

Recipe

  • 1 clean clams to remove sand and grit.
  • 2 combine remaining ingredients, except salt and pepper.
  • 3 cover and cook over high heat until clams open.
  • 4 adjust seasoning with salt and pepper.
