Brian Boitano's Black Bean Salsa

Total Time: 3 mins Preparation Time: 2 mins Cook Time: 1 min

Ingredients

  • Servings: 12
  • 1 (15 ounce) can black beans, drained and rinsed
  • 2 roma tomatoes, seeded and diced
  • 1 (4 ounce) can green chilies (recommended ( hatch)
  • 1 garlic clove, chopped
  • 1 avocado, halved, pitted and flesh diced
  • 1 lime, juiced
  • 1 1/2 teaspoons dried ancho chile powder
  • 3 ounces queso fresco, about 1/2 cup crumbled
  • 2 tablespoons canola oil
  • 1 pinch salt & freshly ground black pepper
  • 3 tablespoons cilantro, chopped

Recipe

  • 1 mix all ingredients to combine well. serve!
