Caramelized Apple And Onion Bruschetta With Melted Brie

Ingredients

  • Servings: 8
  • 1 large onion, thinly sliced
  • 1 large baguette, cut into 1/2 inch slices
  • 8 ounces brie cheese, rind removed
  • 2 gala apples, cored and sliced into thin wedges
  • 1/4 cup chopped walnuts, toasted
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon dark brown sugar
  • 2 tablespoons olive oil
  • salt

Recipe

  • 1 heat olive oil in a pan to medium high heat. add onions, seasoning with a pinch of salt. cook until they begin to turn brown and caramelize. do not burn!
  • 2 add apples, vinegar, and brown sugar. reduce heat to medium. saute until apples are cooked through and vinegar/brown sugar are absorbed.
  • 3 in the meantime, slice the brie into pieces that are similar in size to the baguette slices. place one slice of cheese on each baguette slice. broil for about 2-3 minutes, or until cheese melts and bread is crispy.
  • 4 top each baguette slice with a spoonful of the caramelized apple/onion mixture. serve warm.
