French Toast Cupcakes

Ingredients

  • Servings: 24
  • 1 1/4 cups all-purpose flour
  • 2/3 cup milk
  • 1/2 cup yogurt
  • 1/2 cup white sugar
  • 1/2 cup butter, melted
  • 1/2 cup raisins
  • 1/3 cup dark brown sugar
  • 2 tablespoons maple syrup, or more to taste
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • preheat oven to 350 degrees f (175 degrees c). grease 24 muffin cups or line with paper muffin liners.
  • whisk flour, milk, yogurt, white sugar, butter, raisins, brown sugar, maple syrup, vanilla extract, baking powder, cinnamon, baking soda, and salt together in a bowl until a batter forms. spoon batter into prepared muffin cups.
  • bake in the preheated oven until golden and the tops spring back when lightly pressed, 20 to 25 minutes.
