Cinco De Mayo Guacamole

Ingredients

  • Servings: 10
  • 3 avocados, ripe
  • 4 scallions, chopped fine
  • 2 garlic cloves, minced
  • 16 grape tomatoes, quartered
  • 1 jalapeno, seeded and minced
  • 1 teaspoon salt (to taste)
  • 1 lime, juice of

Recipe

  • 1 slice avacados in half, remove the pit, and scoop out the flesh with a spoon.
  • 2 add lime juice and mash.
  • 3 add remaining ingredients and stir to combine, chunks are more than acceptable!
  • 4 check for seasoning, and add more salt of needed.
  • 5 cover bowl with saran wrap, pressed down to the very top of the guacamole to prevent from browning. chill until ready to serve.
  • 6 serve over tacos or burritos, or with tortilla chips!
