Cinco De Mayo Guacamole

Ingredients

- 3 avocados, ripe
- 4 scallions, chopped fine
- 2 garlic cloves, minced
- 16 grape tomatoes, quartered
- 1 jalapeno, seeded and minced
- 1 teaspoon salt (to taste)
- 1 lime, juice of
Recipe
- 1 slice avacados in half, remove the pit, and scoop out the flesh with a spoon.
- 2 add lime juice and mash.
- 3 add remaining ingredients and stir to combine, chunks are more than acceptable!
- 4 check for seasoning, and add more salt of needed.
- 5 cover bowl with saran wrap, pressed down to the very top of the guacamole to prevent from browning. chill until ready to serve.
- 6 serve over tacos or burritos, or with tortilla chips!
