Bacon Stuffed Cherry Tomatoes

Total Time: 35 mins Preparation Time: 30 mins Cook Time: 5 mins

Ingredients

  • 1/2 lb bacon
  • 1 pint cherry tomatoes, stemmed
  • salt
  • 4 scallions, finely chopped
  • 1/2 cup mayonnaise

Recipe

  • 1 in a large skillet, cook bacon over medium heat until brown 5-7 minutes.
  • 2 drain on paper towels and chop finely.
  • 3 using a small sharp knife, cut a thin slice from the end of each tomato (the stem end serves as a flat bottom so tomatoes will stand upright).
  • 4 scoop out tomato seeds and pulp with a small spoon.
  • 5 lightly salt tomato cavities and allow to drain upside down on paper towels 20 mins.
  • 6 in a small bowl, combine bacon, scallions and mayonnaise.
  • 7 stir til well mixed.
  • 8 using a small spoon, stuff mixture into tomato cavities, mounding slightly.
  • 9 refrigerate up to two hours before serving.
