Bacon Potato Skins

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 6 large potatoes, baked
  • 2 teaspoons vegetable oil
  • 1 teaspoon chili powder
  • 2/3 cup chopped bacon, cooked and crumbled
  • 2 tablespoons chopped green onions
  • 4 ounces grated cheddar cheese
  • 1/2 cup sour cream
  • 1 tomato, chopped

Recipe

  • 1 scoop out potato pulp leaving 1/4 inch shell.
  • 2 brush shell with oil.
  • 3 sprinkle with chili powder.
  • 4 cut in half lengthwise.
  • 5 top with tomatoes, bacon, onion and cheese.
  • 6 bake 450f 12-14 mins.
  • 7 top with sour cream to serve.
  • 8 serve hot.
