Mi Abuela's Curtida

Ingredients

  • Servings: 6
  • 1 red onion, thinly sliced
  • 3 roma (plum) tomatoes, diced
  • 3 tablespoons cilantro
  • 3 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon pepper
  • 1 pinch salt

Recipe

    Preparation Time: 10 mins Ready Time: 2 hrs 10 mins

  • combine the onion, tomatoes, and cilantro in a non-metal bowl. whisk together the vinegar, sugar, pepper and salt; pour over the onion mixture, and toss to coat. cover and refrigerate 2 to 4 hours. drain right before serving.
