Combo Flatcake (tanzania)

Ingredients

- 1/2 lb lean ground beef
- 3 large potatoes, peeled and grated
- 3 large carrots, peeled and grated
- 1/2 cup whole wheat flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon curry powder
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
Recipe
- 1 combine beef, potatoes and carrots in a large bowl.
- 2 in another bowl, sift together the flour, sugar, salt, curry powder, cinnamon and baking powder.
- 3 add dry mix to the beef mixture, along with the egg and milk. blend thoroughly.
- 4 heat 2 tbsp of oil in a heavy skillet over medium heat.
- 5 dump mixture into skillet in half-cup portions, as many as will fit at one time, flattening each slightly with a wooden spoon.
- 6 cook covered, for 5 minutes or until browned.
- 7 flip cakes over to brown the second side.
- 8 repeat until all the mixture is used, adding the remaining oil, a bit at a time, to prevent sticking.
